Meet the Green Elephant Juicery Team!

One of the best things about taking a class at Mountain Soul Yoga is that you can grab a fresh, organic, locally crafted cold-pressed juice or delicious snack right from our fridge after class! We are beyond proud to have partnered with Avon-based Green Elephant Juicery since our inception and support local business as well as your health. We sat down recently with GEJ’s Osha, Leo and Matthew to get to know them a little better:

How did you get into the business of juice?

There’s an incredible organic veggie cafe in Leo’s original hometown in Massachusetts.  It was hard to believe that Vail, didn’t have the same.

Leo told a friend at the cafe he was going to open one in Vail.  His friends response – “All I know is the world needs more joints like that!  I’m so excited about the incredible people you’re going to meet along the way.”  A few months later with a business plan in the works, Leo literally ran into one of those people, his now partner, trail running up Booth Falls.  He asked if Vail had any good smoothies and “You know, a good veggie, hippie cafe.”  After replying “Not yet, but soon!”  The two got to talking and Leo visited him in NYC for a tour of the numerous juice joints.  They were even more incredible than his hometown cafe!  Leo’s mind was blown and they were “In business!” as his partner likes to say!  The Green Elephant was off to the races!

Soon a space was found in Avon to build out the juicery, and the next incredible person was unknowingly joining the team.  Osha agreed to come out for one weekend from Brooklyn just to give GEJ some opening guidance.  She’s got an incredible restaurant resume!  That weekend turned into a few more weekends, then some weeks, then months, until a full-time partnership was developed (the guys secret plan all along!).

Why Avon, Colorado?

Avon is a wonderful community-based town!  We know our model can service the whole valley with one central juicery here that even makes juice for small satellites throughout the Eagle Valley.  Team GEJ has always wanted to have it’s own shop in Edwards, but when Georgina and Julia of MSY approached us to form a partnership, we were over the moon.  The entire team at GEJ is ecstatic to be featured at Mountain Soul Yoga!

Fresh juice is all the rage right now. We know it’s delicious, but what are some of the top health reasons we should be imbibing regularly?

Juice is all the rage right now, especially cold pressed.  The difference between cold pressed and pasteurized juice, like Tropicana or any other juice you’d find in a super market, is the amount of nutrients and enzymes it contains (the more, the better).  Enzymes allow us to process the nutrients we desire from our food sources.  Enzymes are partially effected in the pasteurization of juice wether your juice is fully pasteurized r HPP (read the fine print…some cold pressed juice is HPP’d!).  Heat is the main cause of enzymes lost but pasteurization of any kind causes loss of enzymes.  We cold press our juice, the cold press process insures we retain the highest amount of nutrients and enzymes possible without heat so you may receive the greatest benefit.  The non pasteurization of our products dictates that we keep the juice fresh so we make all of our juices daily in small batches.Not only does fresh daily juice taste the best, it’s the best for you!!

What Green Elephant juice should we try today and why?
You should try every juice of course, but if we had to suggest a juice we’d recommend the S.P.O.T. Treatment. This juice is one of our more exotic juices, as you won’t find it anywhere else.  The S.P.O.T Treatment is Sweet Potato, Pineapple, Orange and Turmeric.  Each of these ingredients offer a unique benefit including potassium, vitamin C, vitamin B1 and B6.  We use organic turmeric root (not power like most turmeric on the market), this root is used to treat a variety of ailments from the common cold to liver disease.  This is a healthy kick of goodness in a bottle – just in time for cold and flu season.

Why do yoga and juice go hand in hand?

Yoga and Juice go hand in hand; they both help us to achieve the same goal “a life-time of wellness.” Just as we honor ourselves when we arrive on our mats we honor our bodies when we drink juice dense in nutrients, as cold-pressed juice delivers the highest possible amounts of nutrients and enzymes.  The relationship between Yoga and cold-press juice grows stronger with each repeating act believing yoga energizes and purifies us, cold-pressed juice replenishes and fuels our lives.
